Ingredients

  • 3 Large Sweet Potatoes
  • 3 tbsp Olive Oil
  • 1 tsp Paprika
  • 1/2 tsp Sea Salt or more to taste
  • 1/2 tsp Black Pepper

"Honey" Mustard Dipping Sauce

  • 4 tbsp Mustard
  • 1 tbsp Agave

Instructions

  • Preheat oven to 400F (204C). Line a baking tray with parchment paper and set aside.
  • Wash and peel the sweet potatoes, then slice them into fries (however thick/thin you want them).
  • In a mixing bowl, add sliced sweet potatoes and mix in the olive oil and all the spices until sweet potatoes are coated well and everything is evenly combined.
  • Transfer fries to baking sheet that you set aside and spread them out evenly, making sure that they are not over lapping.
  • Bake for 30-40 min, flipping them halfway so that they don't burn on one side.
  • Once fries are tender and slightly crisp, remove them from heat and set aside while you prep dipping sauce.
  • For the "honey" mustard dip, simply take the mustard and agave and combine them well in a small dipping bowl.
  • Enjoy! You can garnish the fries with fresh chopped parsley if desired, but this is totally optional!
