Servings: 3
Course: Appetizer, Side Dish
Cuisine: American

Ingredients

  • 3 Large Sweet Potatoes
  • 3 tbsp Olive Oil
  • 1 tsp Paprika
  • 1/2 tsp Sea Salt or more to taste
  • 1/2 tsp Black Pepper
"Honey" Mustard Dipping Sauce
  • 4 tbsp Mustard
  • 1 tbsp Agave

Method

  1. Preheat oven to 400F (204C). Line a baking tray with parchment paper and set aside.
  2. Wash and peel the sweet potatoes, then slice them into fries (however thick/thin you want them).
  3. In a mixing bowl, add sliced sweet potatoes and mix in the olive oil and all the spices until sweet potatoes are coated well and everything is evenly combined.
  4. Transfer fries to baking sheet that you set aside and spread them out evenly, making sure that they are not over lapping.
  5. Bake for 30-40 min, flipping them halfway so that they don't burn on one side.
  6. Once fries are tender and slightly crisp, remove them from heat and set aside while you prep dipping sauce.
  7. For the "honey" mustard dip, simply take the mustard and agave and combine them well in a small dipping bowl.
  8. Enjoy! You can garnish the fries with fresh chopped parsley if desired, but this is totally optional!
