Easy Healthy Banana Nut Muffins

Ingredients
  

  • 3 ripened bananas
  • 1/3 c honey
  • 1 large egg
  • 1/4 tbsp vanilla extract
  • 1/4 c olive oil
  • 1/4 c milk
Dry Ingredients
  • 1 3/4 c unbleached all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
Add Ins
  • 1/2 chopped walnuts
  • 1/2 chocolate chips

Method
 

Step 1
  1. Preheat oven to 350 degrees F and line muffin pan with liners. Spray liners with nonstick spray.
Step 2
  1. In a large bowl, mash the bananas and mix in all the wet ingredients together until well combined. Add in the dry ingredients to the same bowl. Mix until just combined, DO NOT overmix. Fold in your add ins!
Step 3
  1. Using a ladle or large spoon, pour the batter evenly into the muffin liners. Sprinkle the top with more toppings if you desire! Bake for 25 min or until a toothpick comes out clean or with just a few crumbs.
Step 4
  1. Let the muffins cool for 10 min. Remove and transfer to a wire rack and allow them to fully cool. Enjoy!!
