Rinse the rice thoroughly
Heat a large sauce pan over medium heat and add the olive oil and diced onion to fry for about 1 min, stirring occasionally
Add the rice and allow it to fry in the pan for another min, stirring frequently so that it doesn't burn
Add the rest of the ingredients and stir well
Allow the rice to come to a boil, then lower down to a simmer and cook for 20-25 min
Once rice is cooked, remove from heat and fluff the rice with a fork
Garnish with chopping cilantro if desired and serve as a side to your favorite Mexican dish!
