- 3 C Rolled Oats or 2.75 C. Oat Flour
- 1.5 C Pumpkin Puree
- 1/2 C Maple Syrup
- 1/4 C Unsweetened Almond Milk
- 3/4 tsp. Baking Soda
- 1/2 tsp. Baking Powder
- 1 tsp. Cinnamon
- 1/2 tsp. Pumpkin Pie Spice
- 1/2 tsp. Salt
- 1 tsp. Vanilla Extract
- 1/3 C. Vegan Chocolate Chips
Preheat oven to 350 F
Make the oat flour, if you are going with homemade, by grinding quick or rolled oats down into a fine flour. Make sure that the flour is fine and not coarse.
Transfer the flour into a mixing bowl and mix in the spices and dry ingredients.
Add the wet ingredients to the bowl and mix well. The mixture will be thick and sticky.
Line a bread pan with parchment paper or grease the pan with vegan butter to prevent the bread from sticking and for easy clean up.
Add the mixture to the bread pan and sprinkle the vegan chocolate chips on top.
Bake for 40 min or until you can stick a toothpick in the middle and it comes out clean.
