Ingredients
  

  • 3 C Rolled Oats or 2.75 C. Oat Flour
  • 1.5 C Pumpkin Puree
  • 1/2 C Maple Syrup
  • 1/4 C Unsweetened Almond Milk
  • 3/4 tsp. Baking Soda
  • 1/2 tsp. Baking Powder
  • 1 tsp. Cinnamon
  • 1/2 tsp. Pumpkin Pie Spice
  • 1/2 tsp. Salt
  • 1 tsp. Vanilla Extract
  • 1/3 C. Vegan Chocolate Chips

Instructions
 

  • Preheat oven to 350 F
  • Make the oat flour, if you are going with homemade, by grinding quick or rolled oats down into a fine flour. Make sure that the flour is fine and not coarse.
  • Transfer the flour into a mixing bowl and mix in the spices and dry ingredients.
  • Add the wet ingredients to the bowl and mix well. The mixture will be thick and sticky.
  • Line a bread pan with parchment paper or grease the pan with vegan butter to prevent the bread from sticking and for easy clean up.
  • Add the mixture to the bread pan and sprinkle the vegan chocolate chips on top.
  • Bake for 40 min or until you can stick a toothpick in the middle and it comes out clean.
