Healthy Vegan Banana Pancakes

Healthy, minimal ingredient, vegan, gluten-free banana pancakes!

Ingredients
  

  • 1 Medium Ripe Banana
  • 1 C Oats
  • 1/2 C Almond Milk
  • 1 tsp Vanilla Extract optional
  • 1/4 tsp Cinnamon optional
  • 1 tsp Baking Powder

Method
 

  1. Add all of your ingredients into a blender and blend until you have a pancake batter consistency. Add more milk if batter is too thick, but be careful not to add too much ( I recommend one tbsp. at a time)
  2. Heat a non stick pan over medium heat and add pancake batter 1/4 C at a time for each pancake.
  3. Cook each side for about 1 min or until they are golden brown. Batter does bubble when it's ready to flip!
  4. Enjoy with your favorite toppings!
