Oil Free Asparagus Pasta Salad

This pasta salad is oil free, vegan, and full of flavor! Made with a creamy tahini dressing and classic penne pasta with options to make it gluten free!

Ingredients
  

Pasta
  • 16 oz Penne Pasta or pasta of choice
  • 1 C Asparagus chopped, ends trimmed
  • 1/2 C Sun Dried Tomatoes
  • 1/2 Small Red Onion diced
  • 1 Small Bunch of Parsley chopped, optional
Dressing
  • 1/3 C Tahini
  • 3 tbsp Lemon Juice or juice of 1 lemon
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Paprika
  • 1/2 tsp Sea Salt
  • 1/4 tsp Black Pepper
  • 1 tsp Maple Syrup
  • 1/3 C Water

Method
 

  1. Start by cooking the pasta according to package instructions
  2. While the pasta is cooking, chop and dice the asparagus, parsley, and red onion
  3. Add the asparagus to the pasta 5 min before it finishes cooking and allow it to cook with the pasta
  4. Make the dressing by mixing all of the ingredients
  5. Once the pasta is finished cooking, remove from heat, drain, and rinse with cold water
  6. Add the remaining ingredients along with the dressing and stir until everything is well combined
