Tofu Egg Breakfast Scramble

Ingredients
  

  • 1 tbsp. Olive Oil
  • 1 Block Tofu firm
  • 2 C. Spinach
  • 1 Roma Tomato diced
  • 1 tsp. Turmeric
  • 2 tbsp. Nutritional Yeast
  • 1 tsp. Garlic Powder
  • 1 tsp. Paprika
  • 1/2 tsp. Salt
  • 1/4 tsp. Black Pepper or more to taste

Equipment

  • Non Stick Pan
  • Mixing Bowl

Method
 

  1. Take your block of tofu and drain the excess water. You can also pat it with a cloth or paper towel to soak up some of the extra water.
  2. Crumble the tofu into a mixing bowl using your hands or a fork, then add all the spices and mix well.
  3. Heat a non stick pan over medium heat and coat with olive oil. You can omit the oil if you are oil free and have a good non stick pan. Add the tofu mixture and mix again.
  4. Cook the tofu until it begins to slightly brown, then add spinach and diced tomato. Mix well.
  5. Keep mixing until the tofu brown and spinach and tomato are cooked.
  6. Remove from heat and serve with your favorite side, enjoy!
