In a large mixing bowl, mash bananas completely and add in maple syrup, vanilla extract, and peanut butter. Mix well until everything is thoroughly combined.
Add in the rest of the ingredients except for the blueberries and mix until everything is well combined again.
Finally, gently fold in the blueberries.
Form the dough into 10-12 cookies with hands or cookie spoon. Place on baking sheet lined with parchment paper and bake for 10 min.
Allow the cookies to cool completely before eating.
