Preheat the oven to 350 F
In a large mixing bowl, combine the melted vegan butter, mashed banana, sugar, and vanilla extract until everything is well combined
Add the remaining ingredients, except for the chocolate chunks, and combined until a dough is formed
Gently fold in the chocolate chunks
Cover and place in the fridge to chill for 2 hours
Using a tablespoon or your hands, form small cookie dough balls and place them on a parchment lined cookie sheet. Press the cookie dough down slightly
Bake for 13 min and allow cookies to cool before serving
This recipe makes about 3 dozen cookies. You might have to bake several batches if you decide to make the entire cookie dough. You can also freeze a portion of the cookie dough to save for later!
