Easy, simple, vegan avocado cheese sandwich with spinach, tomato, & added vegan deli meat slices for extra protein!

Out of the many delicious vegan foods I love, sandwiches have got to be my absolute favorite of them all! Maybe it’s because I love carbs (bread mainly!) or perhaps it’s because of all the different varieties of sandwiches you can make! The possibilities are endless. Either way, my go to sandwich is anything with cheese, avocado, and usually vegan deli meat slices! The avocado adds extra creaminess so you don’t need to add any mayo, although you can add some vegan mayo if you still want to. I have also tried this sandwich with some vegan cream cheese and it was delicious, so feel free to experiment a little bit.
How to Make the Vegan Sandwich
For this sandwich, you will need:
- 2 Slices Whole Wheat Bread
- 1/2 Large Avocado
- 1 Slice of Vegan Cheese (I used the Field Roast Chao brand)
- Vegan Deli Meat Slices
- Slices of Tomato
- Handful of Spinach
- Mustard
You can toast the bread a little or leave it soft, I personally like my bread slightly toasted! I have a recipe on how to make your own homemade vegan deli meat slices, which is great if you eat a lot of vegan deli meat. It yields about 30-40 slices, depending on how thick you slice them. It’s pretty simple to make, but it does take a little bit of time. If you are someone that doesn’t eat deli slices regularly, then you can always opt for store bought!
Steps
- Toast bread slightly, if desired
- Add spinach, tomato, cheese, deli slices, and avocado. This is the order I make my sandwiches in but I guess it doesn’t really matter!
- Finally, add the mustard. Enjoy!
Enjoy the sandwich on it’s own or next to a simple salad for a healthy, balanced plant based meal!
Simple Vegan Avocado Cheese Sandwich
Ingredients
- 2 Slices of Whole Wheat Bread
- 1/2 Large Avocado
- 1 Slice Vegan Cheese
- 2-3 Vegan Deli Meat Slices
- 1 Tomato
- 1 Handful Spinach
- 1 tsp Mustard
Instructions
- Toast bread slightly, if desired.
- Assemble sandwich by layering the spinach, tomato slices, cheese, deli meat, avocado, and mustard in this order or whatever order you prefer.
- Enjoy! This sandwich is best eaten immediately but can be made ahead of time for school or work, preferably the morning of since the avocado can brown!
