Chickpea Veggie Burger

Crispy, Savory, Chickpea Veggie Burger
Servings: 6

Ingredients
  

  • 1 tbsp olive oil
  • 1 yellow onion medium
  • 1 C. shredded carrots
  • 1 C. cauliflower florets
  • 1/2 tsp salt
  • 1.5 C. chickpeas canned
  • 1 C. rolled oats
  • 1/2 C. chopped parsley
  • 1 flax egg
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 tbsp olive oil for frying

Method
 

  1. Chop onion and cook in a pan coated with olive oil until fragrant and tender.
  2. Add the carrots and cauliflower to the pan and cook until tender, but don't let them get too mushy.
  3. Make a flax egg by adding 1 tbsp flax and 2 tbsp water to a small bowl and let it sit for 1-2 min.
  4. Add all of your ingredients to a blender and blend until almost smooth, but leaving some texture if desired.
  5. Form mixture into 6-8 patties depending on how small or big you want them.
  6. Heat a non stick pan with some olive oil and fry patties for 2-3 min on each side, or until golden brown.
  7. Serve patties on burger buns with favorite toppings!
  8. These can be stored in fridge in an air tight container for up to 5 days.
