Can’t figure out what to make for your next family meal? This vegan chickpea veggie burger is packed with protein, flavor, and so much good nutrition. Not only is it super healthy for you, but it’s very tasty as well!

I love putting together different veggie burgers and trying out different flavors and textures, but this one really stood out to me. Chickpeas are perfect for veggie burgers because they are more neutral in flavor than black or pinto beans and give more texture. Don’t get me wrong, I love black bean veggie burgers too, but sometimes it’s nice to switch things up!

I wanted to recreate Mediterranean flavors with this burger since I have always loved falafel burgers, so I played around with the spices until I got it just right!

How to Make the Chickpea Veggie Burgers

For these yummy chickpea veggie burgers you will need:

  • Shredded carrots
  • Cauliflower florets
  • Canned Chickpeas
  • Onion
  • Parsley
  • Flax
  • Rolled Oats
  • Olive Oil
  • Spices & Seasonings: Paprika, Garlic, Salt & Pepper

Start by chopping the onion and adding it to a medium pan coated with olive oil. Cook the onion until it becomes fragrant and translucent. Next, shred the carrots and chop the cauliflower into florets if not already chopped. Add the vegetables to the the pan and cook until they become somewhat tender, but not too mushy.

In a small bowl, make a flax egg by adding 1 part flax and 2 parts water. Let it sit for 1-2 min. Once vegetables and flax egg are done, add all of the ingredients in a blender and blend until almost smooth. I like to leave a little bit of texture but this is just personal preference!

Take you mixture and form into patties with your hands. Heat a non stick pan and coat with olive oil. Next, add your patties and cook 2-3 min. each side or until golden brown. Serve on your favorite burger bun with your favorite toppings! Mine are tomatoes, spinach, pickles, vegan cheese, mustard, and ketchup! This burger pairs great with some sweet potato fries or a simple salad.

Ingredients
  

  • 1 tbsp olive oil
  • 1 yellow onion medium
  • 1 C. shredded carrots
  • 1 C. cauliflower florets
  • 1/2 tsp salt
  • 1.5 C. chickpeas canned
  • 1 C. rolled oats
  • 1/2 C. chopped parsley
  • 1 flax egg
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 tbsp olive oil for frying

Instructions
 

  • Chop onion and cook in a pan coated with olive oil until fragrant and tender.
  • Add the carrots and cauliflower to the pan and cook until tender, but don't let them get too mushy.
  • Make a flax egg by adding 1 tbsp flax and 2 tbsp water to a small bowl and let it sit for 1-2 min.
  • Add all of your ingredients to a blender and blend until almost smooth, but leaving some texture if desired.
  • Form mixture into 6-8 patties depending on how small or big you want them.
  • Heat a non stick pan with some olive oil and fry patties for 2-3 min on each side, or until golden brown.
  • Serve patties on burger buns with favorite toppings!
  • These can be stored in fridge in an air tight container for up to 5 days.
