Grease a 9X13 inch pan with a little bit of vegan butter
Wash and slice the peaches (peel if desired) and add them into greased baking pan. Toss them with the brown sugar and cornstarch until well combined. Evenly spread out the peaches in the pan and set aside.
For the batter, mix the melted butter, brown sugar, vanilla extract, and almond milk in a medium sized mixing bowl. Once this is well combined, add the flour, baking powder, and salt. Mix well until a cookie dough batter consistency is formed. It should be like cookie dough but a little more crumbly.
Crumble the batter over the peaches evenly as best you can (it doesn't need to be perfect!)
Bake for 30-35 min until golden brown.
Once it's done, let it cool for about 15 min before serving. Serve on it's own or with some vegan vanilla ice cream!
Notes
The peach cobbler is best when eaten fresh, however, you can store it in the fridge for up to 3 days!
