Easy Vegan Peach Cobbler

Nothing says summer more than sweet peaches. This crisp, easy, vegan peach cobbler is the perfect combination of sweet and tart. It will keep you coming back for more!

Although I will admit that summer time is not my favorite season (fall girl over here), there are so many things to love about summer. One of the best things to look forward to in summer is all the glorious fruit that is in season! This includes berries, mangoes, watermelon, AND PEACHES!

Growing up in a fairly rural area of California, there was always an abundance of peaches and peach orchards. Nothing compares to a fresh, organic peach picked from your or your friend’s/neighbor’s tree! Recently, a family friend who owns acres of peach trees dropped off a huge box of peaches at my husbands work. I was so happy when he brought them home because this meant PEACH COBBLER of course!

Fresh Vs. Frozen Peaches

While I have and you can make this recipe using frozen peaches, I personally think using fresh is so much better flavor wise. Using frozen peaches does have it’s benefits though, including that they are already sliced, peeled, and ready to use! I’ve talked before about how using frozen fruits and vegetables is just as healthy as using fresh, so if that’s all you have definitely go for it!

How to Make the Vegan Peach Cobbler

For this recipe, you will need:

  • Ripe Peaches, sliced
  • Brown Sugar
  • Cornstarch
  • Vegan Butter
  • Almond Milk
  • Vanilla Extract
  • All purpose flour
  • Baking Powder
  • Salt

Most of these ingredients are pretty basic that you probably already have on hand! If not, they are pretty easy to find at your local grocery store.

First things first is to reheat your oven to 350F.

To start, wash and slice your peaches. You can peel them, if desired, but I don’t mind the skin and actually think it gives it nice texture!

Next, grease a 9X13 inch baking pan with a little bit of butter. Add in the sliced peaches and sprinkle the brown sugar and cornstarch on top. Mix the peaches well right there in the baking pan and then spread them out evenly.

Then, for your crumble batter, mix together the melted butter, vanilla extract, and sugar. Once that is well combined, add the milk, flour, and salt and mix well again until a cookie dough batter consistency is form. It should be like cookie dough but a little more crumbly. Crumble the mixture on top of the peaches in the baking pan. The peaches don’t have to be perfectly covered, so don’t worry too much here!

Add the peach cobbler into the oven and bake for 30-35 min or until it crisps and browns! This vegan peach cobbler is best when it is eaten fresh, but it can store in the fridge for up to 3 days. Enjoy on it’s own or with a scoop of non dairy vanilla ice cream on top!

Ingredients
  

Filling

  • 4-5 Large Ripe Peaches
  • 1/4 C Brown Sugar
  • 1 tbsp Cornstarch

Batter

  • 1/2 C Melted vegan butter
  • 3/4 C Brown Sugar
  • 1 tsp Vanilla Extract
  • 1 C All Purpose Flour
  • 1 tbsp Almond Milk
  • 1 tsp baking powder
  • 1/8 tsp salt

Instructions
 

  • Preheat oven to 350F
  • Grease a 9X13 inch pan with a little bit of vegan butter
  • Wash and slice the peaches (peel if desired) and add them into greased baking pan. Toss them with the brown sugar and cornstarch until well combined. Evenly spread out the peaches in the pan and set aside.
  • For the batter, mix the melted butter, brown sugar, vanilla extract, and almond milk in a medium sized mixing bowl. Once this is well combined, add the flour, baking powder, and salt. Mix well until a cookie dough batter consistency is formed. It should be like cookie dough but a little more crumbly.
  • Crumble the batter over the peaches evenly as best you can (it doesn't need to be perfect!)
  • Bake for 30-35 min until golden brown.
  • Once it's done, let it cool for about 15 min before serving. Serve on it's own or with some vegan vanilla ice cream!

Notes

The peach cobbler is best when eaten fresh, however, you can store it in the fridge for up to 3 days!
