Easy Vegan Pumpkin Pie Overnight Oats
These vegan pumpkin pie over night oats taste like Fall in a jar! They are super healthy and easy to make. Make them ahead of time as a part of your meal prep so that you can take your healthy breakfast on the go!

- 1 C Rolled Oats
- 3/4 C Coconut Milk
- 1/2 C Pumpkin Puree
- 1 tsp Pumpkin Spice
- 1/2 tsp Cinnamon
- 1 tsp Vanilla Extract
- 1/2 tbsp. Maple Syrup
- 1 Handful Walnut or Pecans or topping of choice
Add all of the ingredients except for the toppings to a jar or container with a lid and stir well.
Place in fridge to chill for at least 2 hours, but preferably overnight.
Enjoy hot or cold with your preferred toppings! If oats are dry, add in more milk!
