Easy Vegan Pumpkin Pie Overnight Oats

These vegan pumpkin pie over night oats taste like Fall in a jar! They are super healthy and easy to make. Make them ahead of time as a part of your meal prep so that you can take your healthy breakfast on the go!

Ingredients
  

  • 1 C Rolled Oats
  • 3/4 C Coconut Milk
  • 1/2 C Pumpkin Puree
  • 1 tsp Pumpkin Spice
  • 1/2 tsp Cinnamon
  • 1 tsp Vanilla Extract
  • 1/2 tbsp. Maple Syrup
  • 1 Handful Walnut or Pecans or topping of choice

Instructions
 

  • Add all of the ingredients except for the toppings to a jar or container with a lid and stir well.
  • Place in fridge to chill for at least 2 hours, but preferably overnight.
  • Enjoy hot or cold with your preferred toppings! If oats are dry, add in more milk!
