Who else loves having oats for breakfast?! I know I sure do. Oats are my go to when it comes to breakfast. There are just so many different toppings and flavors you can add to oats that they almost never get boring. I say almost because I still do like to switch it up every now and then!

As we have finally transitioned into Fall, I have been on a pumpkin spice kick! If you haven’t already, check out these Vegan Pumpkin Chocolate Chip Cookies and this Gluten Free Pumpkin Bread! Fall is my favorite season, but this year I have really been enjoying baking a lot more than other years. So there will probably be even more recipes to come!

Pumpkin Pie Overnight Oats

Because I already have oats almost daily, this recipe was a no brainer for me! It’s so simple to make and literally tastes like pumpkin pie in a jar!

For this recipe, you will need:

  • 1 C. Rolled Oats
  • 3/4 C. Coconut Milk (or any plant based milk)
  • 1/2 C. Pumpkin Puree
  • 1 tsp. Pumpkin Pie Spice
  • 1/2 tsp. Cinnamon
  • 1 tsp. Vanilla Extract
  • 1/2 Tbsp. Maple Syrup
  • Walnuts or Pecans (or any topping of your choice!)
  • A jar or container with a lid

Steps

  1. In a glass jar or any container, add in all of the ingredients except for the toppings and stir so that everything is fully combined.
  2. Cover the jar or container and leave place in the fridge for at least 2 hours, but preferably overnight.
  3. Add in your favorite toppings and enjoy!

You can heat the oats in the microwave or just enjoy them cold! You can also use any plant based milk you prefer, but I really love the taste of coconut milk in this. It gives it a creamier and slightly sweeter taste!

Ingredients
  

  • 1 C Rolled Oats
  • 3/4 C Coconut Milk
  • 1/2 C Pumpkin Puree
  • 1 tsp Pumpkin Spice
  • 1/2 tsp Cinnamon
  • 1 tsp Vanilla Extract
  • 1/2 tbsp. Maple Syrup
  • 1 Handful Walnut or Pecans or topping of choice

Instructions
 

  • Add all of the ingredients except for the toppings to a jar or container with a lid and stir well.
  • Place in fridge to chill for at least 2 hours, but preferably overnight.
  • Enjoy hot or cold with your preferred toppings! If oats are dry, add in more milk!
