Healthy Vegan Pumpkin Chocolate Chip Cookies

These pumpkin chocolate chip cookies are healthy, vegan, gluten free, and super easy to make! They are the perfect cookies to make during the Fall season. Pair them with your favorite non-dairy milk for a tasty treat!

Ingredients
  

  • 2.5 C Rolled Oats
  • 1 C Pumpkin Puree
  • 3 tbsp. Maple Syrup
  • 1 tsp. Cinnamon
  • 1/3 C Vegan Chocolate Chips

Instructions
 

  • Preheat oven to 350 F
  • Mix all of the ingredients minus the chocolate chips in a large bowl
  • Fold in the chocolate chips
  • Form into 10-12 cookies. Make sure you form them into cookie shapes because they will not expand while baking.
  • Place on a lined baking tray and bake for 12 min.
  • Allow the cookies to cool before eating.
