Healthy Vegan Pumpkin Chocolate Chip Cookies

These pumpkin chocolate chip cookies are healthy, vegan, gluten-free, and super easy to make!

It’s finally Fall and you know what that means! It means it’s time to make everything pumpkin of course! It’s October 1st as I write this and I wanted to start this month off with some delicious pumpkin cookies. Healthy vegan pumpkin chocolate chip cookies, to be exact!

While these still have some sugar and chocolate, they are much healthier than your average cookie. They are made with fiber pack whole grain oats, pumpkin puree, and maple syrup. The non dairy chocolate chips are optional, but highly recommended. I mean, who doesn’t love chocolate?!

Aside from being vegan, they are also gluten free since they are flourless! This makes them much easier to work with, and they require just one bowl and a few minutes! They are easy to make and perfect for whipping up when you have a random craving for something sweet.

If you have trouble finding non dairy chocolate chips, I used these ones from Enjoy Life.

Steps

  1. Preheat oven to 350 F
  2. Add all the ingredients minus the chocolate chips to a large bowl and mix thoroughly.
  3. Fold in the chocolate chips.
  4. With your hands, form 10-12 cookies into cookie shapes. The cookies will not expand when baking so you will want to form them before baking.
  5. Place the cookies on a lined baking tray and bake for 12 minutes.
  6. Allow the cookies to cool before eating

  • 1 C Pumpkin Puree
  • 3 tbsp. Maple Syrup

  • 1/3 C Vegan Chocolate Chips
