High Protein Vegan Pancakes

Ingredients
  

  • 1 C. Oats quick or rolled
  • 1/4 C. Plant Based Vanilla Protein Powder any brand works really!
  • 1 tbsp. Baking Powder
  • 1/4 tsp. Salt
  • 1 C. Plant Milk I used almond but any dairy free milk works

Equipment

  • Blender
  • Non Stick Pan

Method
 

  1. Grind oats in blender until a flour is formed
  2. Add the rest of the dry ingredients and blend until uniform
  3. Add the plant milk (or water if you prefer)
  4. Blend until you reach a pancake batter consistency (not too dry, not too runny) you might need to add a little bit more liquid if batter is too dry.
  5. Heat a non stick pan (you can grease pan with vegan butter or oil if you'd like) and add batter 1/4 c. at a time cooking each side for about 1 min or until the turn golden brown.
  6. Serve and enjoy!
