High Protein Vegan Pancakes

Why Breakfast is So Important

I have to say that breakfast really is the most exciting meal of the day for me.

Breakfast is one of those meals that can be easily skipped throughout our busy lives. Eating a well rounded breakfast helps to kick start your metabolism and gives you the energy you need to conquer the day! Why would you want to miss out on that? Plus this recipe takes no time at all!

Gluten Free & Protein Packed

These are perfect for when you are craving something sweet while also wanting to fuel your body with power packed nutrition. These pancakes are a great gluten free alternative to pancakes made with wheat flour. However, if you aren’t going for gluten free and prefer using regular flour, feel free to do so!

Adding vanilla protein powder really helps bump up the protein content and adds flavor as well! However, flavor & protein content will vary depending on which plant based protein powder you use for this recipe. The one I used is the vanilla flavor from Orgain Organic Protein.

Now, if you are a hungry gal (or guy) like myself, you will definitely eat this whole batch of pancakes. Even my husband, who is quite a picky eater with a big appetite, loves these pancakes! These pancakes are suited for the entire family and if you need more pancakes you could simply double or triple the recipe!

How to Make the Vegan Protein Pancakes

-Make the oat flour by grinding in a blender or food processor

-Add the rest of the dry ingredients into the blender

-Add the plant milk or water and blend until you reach the desired consistency (you might have to add a little bit more liquid if batter is too thick)

-Pour batter 1/4 C. at a time into a non stick pan (you can also use some butter or oil if you think pancakes will stick to the pan)

-Cook for about 1 min or until batter begins to bubble

– Flip to cook the other side for about 1 min

-Top with maple syrup, nut butter, fruit, or anything your heart desires

-Serve and enjoy!

Ingredients
  

  • 1 C. Oats quick or rolled
  • 1/4 C. Plant Based Vanilla Protein Powder any brand works really!
  • 1 tbsp. Baking Powder
  • 1/4 tsp. Salt
  • 1 C. Plant Milk I used almond but any dairy free milk works

Instructions
 

  • Grind oats in blender until a flour is formed
  • Add the rest of the dry ingredients and blend until uniform
  • Add the plant milk (or water if you prefer)
  • Blend until you reach a pancake batter consistency (not too dry, not too runny) you might need to add a little bit more liquid if batter is too dry.
  • Heat a non stick pan (you can grease pan with vegan butter or oil if you'd like) and add batter 1/4 c. at a time cooking each side for about 1 min or until the turn golden brown.
  • Serve and enjoy!
