This easy Spanish Rice makes the perfect side dish to serve with any meal and is naturally vegan and vegetarian friendly!

This rice, also known as Mexican rice, is made with simple minimal ingredients such as white rice, tomato sauce, garlic, onion, and seasonings. This rice is first sauteed in olive oil to give it a nice toasted flavor. The onion and garlic are also added along with the rice while cooking in the oil. Water along with the rest of the ingredients are then added for the rice to steam and get fluffy!
Spanish rice, or Mexican rice, reminds me of home. It was a staple in my family growing up, and I love incorporating it into my weekly meals. It’s also very budget friendly and you can make a lot of rice for very little money! My favorite way of having Spanish rice is in burrito bowls or actual burritos, yum!
I also love serving with enchiladas or enchilada casserole, tacos, or with some tofu and veggies.
How to Make the Spanish Rice
For this recipe, you will need:
- 1.5 Cups long grain white rice
- 2 tbsp olive oil
- 1/2 diced white or yellow onion
- 1 tsp garlic powder
- 3/4 15 oz can tomato sauce
- 2 diced Roma tomatoes
- 2 cups vegetable broth
- 1 tsp salt
- Cilantro for garnish (optional)
- Start by rinsing your rice thoroughly
- Next, heat a large sauce pan over medium heat and add the olive oil along with the diced onion. Allow the onion to cook for about 1 min, stirring occasionally.
- Add the rice and allow it to fry in the oil a little for about another min, stirring frequently so it doesn’t burn.
- Add the rest of the ingredients and stir well. Allow the rice to come back to a boil, then bring down to a simmer and cover.
- Cook for 20-25 min, the fluff the rice with a fork.
- Serve with beans or as a side to any dish!
The Spanish Rice can be stored in an air tight container for up to 5 days, so it’s great for meal prep! Rice does tend to dry out. To re-hydrate, add a tiny bit of water (about a tablespoon) when re-heating in the microwave. Make sure to cover when re-heating!
Easy Spanish Rice
Ingredients
- 1.5 C Long Grain White Rice
- 2 tbsp Olive Oil
- 1/2 White or Yellow Onion
- 1 tsp Garlic Powder
- 3/4 15 oz can Tomato Sauce
- 2 Diced Roma Tomatoes
- 2 C Vegetable Broth
- 1 tsp Salt
- 1 Bunch of Cilantro for garnish, optional
Instructions
- Rinse the rice thoroughly
- Heat a large sauce pan over medium heat and add the olive oil and diced onion to fry for about 1 min, stirring occasionally
- Add the rice and allow it to fry in the pan for another min, stirring frequently so that it doesn't burn
- Add the rest of the ingredients and stir well
- Allow the rice to come to a boil, then lower down to a simmer and cook for 20-25 min
- Once rice is cooked, remove from heat and fluff the rice with a fork
- Garnish with chopping cilantro if desired and serve as a side to your favorite Mexican dish!
