Easy Vegan Tofu Ricotta Cheese

I recently made this tofu ricotta because I really wanted to add it to my vegan lasagna recipe. I wasn’t expecting this to turn out great if I’m being honest, but it ended up turning out really good!

To my surprise, the texture was very close to real ricotta cheese and the flavor wasn’t so off either. It also only takes like 5 min to make so it’s perfect for when you are short on time!

Vegan Ricotta Ingredients

For this recipe, you will need:

  • 1 block extra firm tofu
  • 2 tbsp. lemon juice
  • 1/2 sweet yellow onion
  • 2 tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp salt
  • pinch of black pepper
  • 2 tbsp. nutritional yeast

Steps

  1. Dice up the onion and place it in a small pan with the oil and cook until it becomes soft. Stir as needed.
  2. Add all of the ingredients to a blender, including the onion once it’s soft.
  3. Blend until everything is well combined and you have a ricotta cheese like texture.
  4. Add to your favorite vegan lasagna or casserole!

As you can see, this recipe to really easy and straightforward! There are no fancy ingredients or complex steps to worry about. You can store this vegan ricotta cheese in an air tight container in your fridge your 4-5 days.
