Easy Vegan Lasagna With Vegan Ricotta

This easy vegan lasagna recipe with vegan ricotta cheese is quick and easy to make for a bust weeknight or for meal prepping!

This vegan lasagna is great for when you don’t have that much time to be in the kitchen! This recipe takes little time to prep and the majority of the time is spent waiting for it to bake! While you wait for the lasagna to bake, you will have time to do other tasks!

I wish I had known how easy it really is to make homemade vegan ricotta cheese. For the longest time, I would make my vegan lasagna without ricotta cheese because I thought it would be very complicated to make. I finally decided to try a tofu ricotta cheese recipe and it came out great after only 2 tries! All you need is a few simple ingredients and a blender to make it. I will link the recipe here.

I love making casseroles or lasagna for dinner because it easy! Not only easy to make, but I find that it’s also an easier clean up since everything goes into one dish. This recipe is great for making for dinner and then have leftovers to take to work the next day. It’s also one of my husbands new favorite meals to have!

Vegan Lasagna Ingredients

For this recipe, you will need:

  • 12 Lasagna Noodles
  • 1 Jar Marinara Sauce
  • 2 Cups Spinach
  • 1 batch of Vegan Ricotta Cheese
  • Vegan Mozzarella Cheese for Topping

Steps

  1. Cook lasagna noodles according to package instructions
  2. Pre-heat oven to 375 F
  3. Add 1/2 C. of the marinara sauce to a 9X13″ casserole dish
  4. Next, add three of the lasagna noodles
  5. Layer the ricotta cheese, spinach, and more sauce. Repeat 2X
  6. Sprinkle vegan mozzarella cheese on top, if desired.
  7. Bake cover with foil with 25 min and for another 20 min uncovered.
  8. Enjoy!
