This pasta salad is vegan, oil-free, and full of flavor! The best part? It’s a one pot pasta kind of recipe! I love one pot pasta recipes because they are so easy and convenient to make. Plus, the clean up afterwards is so much quicker.
This pasta salad is also great for meal prepping. Simply make it ahead of time and store in separate containers to take with you on the go!
How to Make the Oil Free Pasta Salad
For the pasta, you will need:
- 16 oz of Penne Pasta or pasta of choice
- 1 C. Chopped Asparagus
- 1/2 C Sun Dried Tomatoes
- 1 Small Bunch of Parsley chopped
- 1/2 a Small Red Onion diced
For the dressing, you will need:
- 1/3 C. Tahini
- 3 tbsp Lemon Juice
- 1 tsp Maple Syrup
- 1/2 tsp Garlic Powder
- 1/2 tsp Paprika
- 1/4 tsp Black Pepper
- 1/2 tsp Salt, plus more to taste if desired
- 1/3 C. Water
Steps
- Start by cooking the pasta according to package instructions
- While the pasta is cooking, chop and dice the asparagus, parsley, and red onion
- Add the asparagus to the pasta 5 min before it finishes cooking and allow it to cook with the pasta
- Make the dressing by mixing all of the ingredients
- Once the pasta is finished cooking, remove from heat, drain, and rinse with cold water
- Add the remaining ingredients along with the dressing and stir until everything is well combined
You can serve this immediately or chill in the fridge for about 30 min to make it colder! Store in an air tight container in the fridge for up to 4 days.
