Cookies are my favorite dessert of all time. I love all cookies, all textures, and all flavors (for the most part). I feel like you get so much variety with cookies, more than any other dessert! Although I love almost all cookies, anything with chocolate is my go to.
These vegan chocolate chunk cookies are fairly simple to make. If you prefer traditional chocolate chips, then swap the chocolate chunks for vegan chocolate chips or cacao nibs. Personally, I prefer chunks of chocolate in my cookies! I also used mashed banana in this recipe, but if you prefer applesauce, feel free to swap that as well.
How to make the Chocolate Chunk Cookies
For this recipe, you will need:
- 2 1/2 C All Purpose Flour
- 1/2 tsp Baking Powder
- 1 tsp Baking Soda
- 3/4 C Turbinado Sugar
- 3/4 C Brown Sugar
- 1 tsp Salt
- 1 tsp Vanilla Extract
- 1/2 C Mashed Banana
- 3/4 Melted Vegan Butter
- 1 Cup Chocolate Chunks
- Preheat oven to 350 F
- Start by melting the butter and mixing the butter, sugar, mashed banana, and vanilla extract in a large mixing bowl
- Next, add the rest of the ingredients, except for the chocolate chunks, and combine until a dough is formed.
- Gently fold in the chocolate chunk pieces.
- Place in the fridge to chill for 2 hours.
- Form the dough into small balls using a tablespoon and your hands and place on to a parchment lined baking sheet. Press the cookies slightly ( I found that they don’t expand very much if you leave as a ball).
- Bake for 13 minutes, then let them cool before eating.
*Note: This recipe makes about 3 dozen cookies so you might have to bake 2-3 batches. You can also freeze a portion of the dough if you don’t want to make it all.
Vegan Chocolate Chunk Cookies
Ingredients
- 2 1/2 C All Purpose Flour
- 1/2 tsp Baking Powder
- 1 tsp Baking Soda
- 3/4 C Turbinado Sugar
- 3/4 C Brown Sugar
- 1 C Chocolate Chunks I used cut up dark chocolate
- 1 tsp Salt
- 1 tsp Vanilla
- 1/2 C Mashed Banana
- 3/4 C Melted Vegan Butter
Instructions
- Preheat the oven to 350 F
- In a large mixing bowl, combine the melted vegan butter, mashed banana, sugar, and vanilla extract until everything is well combined
- Add the remaining ingredients, except for the chocolate chunks, and combined until a dough is formed
- Gently fold in the chocolate chunks
- Cover and place in the fridge to chill for 2 hours
- Using a tablespoon or your hands, form small cookie dough balls and place them on a parchment lined cookie sheet. Press the cookie dough down slightly
- Bake for 13 min and allow cookies to cool before serving
- This recipe makes about 3 dozen cookies. You might have to bake several batches if you decide to make the entire cookie dough. You can also freeze a portion of the cookie dough to save for later!
