Easy Healthy Banana Nut Chocolate Chip Breakfast Muffins

Want a quick, delicious, healthy snack or on the go breakfast? Look no further! These easy healthy banana nut chocolate chip breakfast muffins are the perfect snack to pack on the go. These and my sourdough discard blueberry muffins have been on my meal plan rotation and I have been loving eating them as a snack during my busy work weeks!

These banana nut chocolate chip muffins are high in fiber and packed with deliciousness!

The best part is, you can add/swap any of the add ins as you’d like!! Personally I love adding walnuts and chocolate chips.

What You Will Need

Wet Ingredients

  • 3 overly ripe bananas – make sure you mash them well!
  • 1/3 c. honey or maple syrup
  • 1 large egg at room temperature
  • 1/4 c. olive oil
  • 1/4 tbsp vanilla extract
  • 1/4 c. milk of choice (I like to use almond or coconut)

Dry Ingredients

  • 1 3/4 c all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt

Add Ins

  • 1/2 c chopped walnuts
  • 1/2 c chocolate chips

Instructions

Step #1

Preheat oven to 350 degrees F and line a muffin pan with liners (makes 12 muffins) and use a non stick spray to spray the inside to avoid muffins from sticking.

Step #2

In a large bowl, mash the bananas and mix in all the wet ingredients together until well combined. Add in the dry ingredients to the same bowl. Mix until just combined, DO NOT overmix. Fold in your add ins!

Step #3

Using a ladle or large spoon, pour the batter evenly into the muffin liners. Sprinkle the top with more toppings if you desire! Bake for 25 min or until a toothpick comes out clean or with just a few crumbs.

Step #4

Let the muffins cool for 10 min. Remove and transfer to a wire rack and allow them to fully cool. Enjoy!!
