This gluten-free vegan chocolate chip pumpkin bread is the perfect healthy treat to make this Fall season! It’s made with simple healthy ingredients, making it pretty guilt-free.
It’s finally October and I have been loving baking everything pumpkin! If you haven’t already tried them, I previously made healthy pumpkin chocolate oat cookies. This time though, I was craving some good pumpkin bread! This bread is moist, perfectly sweetened, and a little dense. It’s not exactly light and fluffy since it is gluten-free, but it’s still moist and soft with good texture!
What do you prefer? Bread or cookies? Or perhaps you are more of a pie person? Personally, I love them all, but pumpkin bread is my all time favorite. I decided to make this bread gluten free using oat flour. Oat flour is something you can easily make at home by grinding down some oats or you can also buy oat flour.
Gluten Free Vegan Pumpkin Bread
To make this healthy delicious pumpkin bread, you will need:
- 3 C. Oats or 2.75 C. of Oat Flour
- 1.5 C. Pumpkin Puree (not pumpkin pie filling)
- .25 Unsweetened Almond Milk
- 1/2 C. Maple Syrup
- 1 tsp. Cinnamon
- 1/2 tsp. Pumpkin Pie Spice
- 1/2 tsp. Salt
- 3/4 tsp. Baking Soda
- 1/2 tsp. Baking Powder
- 1 tsp. Vanilla Extract
- Vegan Chocolate Chip
Steps
- Start by preheating the oven to 350 F.
2. Next, grind the oats (unless you are using already made oat flour) until they become a fine flour. Make sure that it’s not coarse but a FINE flour. Add the flour to a mixing bowl and mix in the spices and dry indredients.
3. Once that is mixed, add the the wet ingredients and to the dry ingredients and mix well. The mixture will be thick and sticky and that’s OKAY.
4. Line a bread pan with parchment paper or grease the pan with vegan butter to prevent the bread from sticking and for easy clean up.
5. Pour the mixture into the bread pan.
6. Sprinkle the chocolate chips on top. You can also fold them into the mixture in you prefer.
7. Bake for 40 min or until you can stick a toothpick in the middle of the loaf and it comes out clean.
Allow the bread to cool a little bit before slicing. Slice and enjoy with nut butter or vegan cream cheese paired with a glass of plant based milk!

- 1.5 C Pumpkin Puree
- 1/2 C Maple Syrup

Instructions

- Transfer the flour into a mixing bowl and mix in the spices and dry ingredients.
- Add the wet ingredients to the bowl and mix well. The mixture will be thick and sticky.
- Line a bread pan with parchment paper or grease the pan with vegan butter to prevent the bread from sticking and for easy clean up.
- Add the mixture to the bread pan and sprinkle the vegan chocolate chips on top.
- Bake for 40 min or until you can stick a toothpick in the middle and it comes out clean.
