Vegan No Bake Chocolate Peanut Butter Brownie Bars

These vegan no bake chocolate peanut butter brownie bars are the perfect treat for summer. You may not think of chocolate when you think of summer desserts, but I promise these do not disappoint! If you’re a chocolate peanut butter fanatic like myself, you will defiantly thank me later.

As a no bake dessert, these are perfect for hot summer days when you just can’t be bothered to turn on the oven. The chocolate peanut butter brownie bars are rich, fudge-like, and will literally take you to another place when you bite into them. Okay, I’m being a bit dramatic, but trust me, they’re so good! If you love peanut butter cups, this is very similar except that they are more brownie like.

How to Make the Chocolate Peanut Butter Bars

So you already no you don’t need an oven for this no bake recipe. What you will need is:

  • Blender or food processor
  • Large mixing bowl (not completely necessary, but possibly helpful)

The ingredients for the vegan no bake chocolate peanut butter brownie bars:

  • Cocoa Powder
  • Peanut Butter
  • Medjool Dates
  • Vegan Chocolate Chips (for melting)
  • Salt

And that’s it! Just 5 ingredients and you have delicious vegan chocolate peanut butter brownie bars! Not to mention that these are way healthier than traditional brownies or chocolate bars. They are packed with healthy fiber from the dates, which also give them a natural sweetness without adding sugar. The peanut butter provides healthy fats along with amazing flavor.

Needless to say, my family and I have really been enjoying these as dessert for the past few days. I am a real sucker for anything chocolate peanut butter flavored! The taste really reminds of a chocolate peanut butter cup, but more brownie like. I hope you enjoy and that your family loves them too!

Equipment

  • Blender or Food Processor
  • Large Mixing Bowl

Ingredients
  

  • 11-12 Medjool Dates should be around 200 g.
  • 1/2 C. Peanut Butter natural
  • 1/3 C. Cocoa Powder unsweetened
  • 1/4 tsp. Salt
  • 1/3 C. Vegan Chocolate Chips melted

Instructions
 

  • Add the dates along with the peanut butter to the blender and blend until everything is combined evenly. This should end up being a sticky mixture. If your blender isn't very powerful, you might need to stop a few times to scrape down the sides.
  • Add the cocoa powder and salt and blend again until everything is uniform.
  • Once your batter is all combined, transfer to a lined tin and press it down tightly and evenly. I used a 8X8 inch tin.
  • Freeze for about half an hour, then slice into 8-10 squares.
  • Melt your chocolate chips in a microwaveable bowl and dip the top of each bar in the melted chocolate.
  • Place on a plate or chopping board lined with parchment paper and place in fridge until the chocolate hardens.
  • Enjoy!
    You can store these in the fridge for up to 5 days in an air tight container.
