There are plenty of days that I don’t have time to make myself a full meal for breakfast or even a snack. While I don’t recommend making a habit of this, I do think these cookies are the perfect option when your in a time crunch.
These vegan blueberry banana breakfast cookies are made with mainly whole food ingredients and are very well nutritionally balanced. You can have a couple of these in the morning or as a midday snack to hold you over until your next meal and not feel any guilt! Not that you should feel guilt over any cookies or desserts, just saying these are a healthier option if you’re goal is to eat healthier.
Clean & Healthy Ingredients
Because these cookies are perfectly sweet and tasty, you might not even realize how healthy they actually are for you! Here are the main ingredients you will need for this recipe:
1. Oats
Oats are an incredibly nutritious grain, rich in antioxidants, fiber, and complex carbs. They keep you full for long periods of time and some studies have shown that they can help you lose weight. Not to mention they also give you long lasting energy to tackle your day!
2. Peanut Butter
While many peanut butters are full of processed sugars and additives, using a natural peanut butter with just peanuts and salt makes peanut butter a healthy source of plant based fat. Fats help you stay full longer and contain monounsaturated and polyunsaturated fatty acids that help your skin, hair, and nails. As a vegan, it’s so important to ensure you are eating enough fats. If you aren’t vegan, this is still important, it’s just more likely that you consume fats more easily if you consume animal products.
3. Plant Protein Powder
I wanted these cookies to have a little something extra about them, so I added some vanilla plant based protein powder for a little protein boost! Not only did it add nutritional value, but also some extra flavor! Protein keeps you satiated for a long period of time and really helps you in maintaining/gaining muscle mass! I’m moderately active, so this is pretty important to me. The protein powder I use is by Orgain and I usually get both vanilla and chocolate! For this recipe you will need vanilla, but use which ever plant protein you prefer!
How to Make the Vegan Breakfast Cookies
For this recipe, you will need a large mixing bowl and a cookie baking sheet. For your ingredients, you will need:
- Ripe & Spotty Bananas
- Rolled Oats
- Natural Peanut Butter
- Vanilla Plant Protein Powder
- Vanilla Extract
- Maple Syrup (optional)
- Fresh blueberries
- Cinnamon
- Baking Powder
- Baking Soda
- Pinch of salt
First, preheat the oven to 350F. Start by mashing the bananas in the bowl, making sure to mash them completely. Then, add the maple syrup, vanilla extract, and peanut butter and combine well. Add the rest of the ingredients, except for the blueberries, and mix again until everything is combined. Finally, gently fold in the blueberries. Using your hands or a spoon, form the dough into cookies and place them on a baking sheet lined with parchment paper. Bake the cookies for 10 min and allow them to cool completely before eating. These cookies can be stored in an air tight container for up to 5 days!
Vegan Blueberry Banana Breakfast Cookies
Ingredients
- 2 Medium Ripe Bananas spotty
- 1.5 C Rolled oats
- 1/2 C Peanut Butter
- 1/4 C Vanilla Protein Powder
- 1 tbsp Maple Syrup
- 1 tsp Vanilla Extract
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
Instructions
- Preheat oven to 350F
- In a large mixing bowl, mash bananas completely and add in maple syrup, vanilla extract, and peanut butter. Mix well until everything is thoroughly combined.
- Add in the rest of the ingredients except for the blueberries and mix until everything is well combined again.
- Finally, gently fold in the blueberries.
- Form the dough into 10-12 cookies with hands or cookie spoon. Place on baking sheet lined with parchment paper and bake for 10 min.
- Allow the cookies to cool completely before eating.
